Кукуруза, как известно, является исконно американским продуктом. Изначально коренные жители Северной Америки собирали зерна растения теосинте, предка современной кукурузы. В них содержалось много крахмала и углеводов, как, например, в хлебе или макаронах. В конечном итоге на территории современной Мексики около 9000 лет назад люди начали сами сажать и ухаживать за растением, в результате чего появилось нечто, похожее на домашнюю кукурузу.
Главное отличие домашней кукурузы от дикого растения заключается в ее более крупных кочанах и зернах. Со временем кукуруза распространилась по всей Северной и Южной Америке. Правда, жарить ее, чтобы получить попкорн, люди стали не сразу.

Существует несколько видов кукурузы, чьи зерна лопаются при нагреве, однако лучше всего это делает только один вид, из которого получается попкорн. Возраст самых древних обжаренных его зерен этого вида составляет 6700 лет. Они были обнаружены на территории Перу.

В настоящее время уже сложно сказать, как впервые появилась воздушная кукуруза. Но, можно предположить, что ее случайно уронили в костер, в результате чего зерна начали взрываться. Скорее всего, какой-то любопытный индеец решил попробовать на вкус получившееся «блюдо». С тех пор кукурузу стали жарить специально.
Правда, первый попкорн не был похож на современный, так как, скорее всего, у индейцев тогда не было ни соли, ни специального масла. Тем не менее воздушная кукуруза стала очень популярной среди коренных американцев. В начале XVII века французские исследователи писали, что Ирокезы взрывали попкорн на горячем песке в глиняных сосудах и добавляли воздушную кукурузу как один из ингредиентов супа.

Миссионер, находившийся в Перу в период с 1609 по 1629 год писал, что коренные жители поджаривают зерна попкорна пока они не взорвутся. Это блюдо они называли “pisancalla” и использовали как лакомство. То есть воздушную кукурузу ели и как самостоятельную закуску, и использовали в качестве ингредиента для приготовления других блюд.
Когда появился современный попкорн
Попкорн в том виде, в котором мы его знаем, был придуман кондитером из США Чарльзом Криторзом. Это произошло, когда он экспериментировал с машиной для обжарки арахиса в 1885 году. Он создал аппарат, который работал на маленьком паровом двигателе. При этом зерна кукурузы обжаривались в смеси из сливочного масла и сала. Процесс обжарки попкорна представлял некое шоу, так как ручку вращал Маленький механический клоун Мистер Рости Тости, чем веселил публику.
