Как пчелы делают мёд
В настоящее время науке известно несколько сотен видов мёда, от 20 тысяч видов медоносных пчел. Состав во многом зависит от вида пчел и нектара, из которого его производят. В нектаре содержится сахароза, то есть смесь из глюкозы и фруктозы, которую пчелы превращают простые высококонцентрированные сахара.
Переработка цветочного нектара в простые сахара происходит в желудках пчел. Это достаточно сложный процесс, в котором принимают участие разные химические вещества и ферменты. Например, за расщепление глюкозы отвечает глюкозооксидаза. Она превращает ее в глюконовую кислоту и перекись водорода. После полной переработки нектара, пчелы срыгивают получившуюся жидкость и заполняют ею соты.

Из сот вода постепенно испаряется, в результате чего жидкость становится вязкой, то есть превращается в известный нам мёд. Помимо сахаров, в нем содержится ряд других веществ, к которым относятся минералы, витамины, ферменты, а также довольно много органических кислот, флавоноидных и фенольных соединений. Именно благодаря такому составу мёд обладает полезными свойствами. Например, он обладает противовоспалительным эффектом и содержит антиоксиданты.
Почему мёд может долго храниться
Как известно, продукты пропадают из-за бактерий, которые в них размножаются. Отсюда следует, что в мёде не размножаются бактерия. Причина заключается в химических веществах, которые возникают при производстве мёда в желудке пчел. К слову, антибактериальными свойствами обладают также и некоторые другие продукты, например, сок капусты.
Антибактериальными свойствами мёд обеспечивают сразу несколько химических веществ. Прежде всего этим свойством продукт обязан большому содержанию сразу нескольких кислот: глюконовой, уксусной, муравьиной и лимонной кислот. Поэтому мёд даже более кислый чем кофе, поэтому большинство микробов не могут выдержать настолько кислую среду.

Может ли мёд испортиться
Из-за антибактериальных свойств мёд не может испортиться в привычном понимании этого слова, то есть его не портят бактерии. Однако он может изменить свои свойства — происходит кристаллизация отдельных его компонентов, ферментация, окисления и т.д.
Изменения, которые происходят с этим продуктом, зависят от многих факторов, например, его типа, источника нектара, региона где он был собран и т.д. В результате реакции Майяра, из сахаров возникает потенциально токсичное соединение, известное как “5-гидроксиметилфурфурол”, или ГМФ. Это вещество имеется во многих других продуктах, начиная от сухофруктов, и заканчивая молоком. То есть, само по себе его присутствия не опасно, однако высокие уровни содержания могут причинить вред здоровью. Правда, безопасные уровни HMF все еще плохо изучены.
Согласно некоторым исследованиям, это соединение может подпитывать рак. Другие исследования показали, что данное вещество, наоборот полезно — оно способно предотвращать аллергические реакции. Согласно международному стандарту Codex Alimentarius максимальное допустимое содержание HMF составляет 40 мг/кг для мёдовых продуктов.
Разные виды мёда могут превысить безопасный предел в течение разного времени. Например, для подсолнечного мёда достаточно всего 18 месяцев, а акациевый накапливает вредное вещество только после пяти лет хранения.
