В ходе исследования ученые кормили крыс диетой, состоящей из продуктов с высоким содержанием жиров и сахара. Возраст животных составлял от 26 до 56 дней, что соответствует подростковому возрасту человека, когда мозг активно развивается и претерпевает определенные изменения. Вторая, контрольная группа крыс, питалась исключительно здоровой пищей.
Под конец эксперимента ученые оценили умственные способности грызунов из обеих групп. В результате оказалось, что крысы, которые питались вредной пищей, не могли идентифицировать новые объекты на арене, тщательно изученную ими же несколько дней назад. Также они не могли узнать знакомый объект, если он был смещен или двигался. У крыс из второй группы таких проблем с памятью не наблюдалось. Об этом исследователи сообщают в журнале Brain, Behavior and Immunity.

Предыдущие исследования также показали, что у крыс, которые питаются вредной пищей, возникают проблемы с памятью, которые не проходят. Кроме того, есть исследования, которые указывают на то, что употребление продуктов, богатых сахаром и жиром, может нарушить контроль над аппетитом и привести к ожирению. Ожирение же в свою очередь тоже приводит к нарушению умственных способностей, о чем мы рассказывали ранее.

Дальнейшее исследование показало, что у крыс, которые потребляли нездоровую пищу, снизился уровень белка, отвечающего за транспортировку нейромедиатора ацетилхолина в гиппокамп, то есть в участок мозга, который отвечает за воспоминания, в том числе пространственной информации. Из-за этих изменений у животных нарушилась передача сигналов ацетилхолина.
