Следует понимать, что мороз не убивает бактерии, но останавливает их рост. Поэтому гораздо важнее срока хранения является качество продуктов и соблюдение правил гигиены на кухне, в том числе и холодильнике. Если вы заморозите зараженные продукты, то сохраните их со всеми бактериями, которые в них находятся.
Поэтому важно содержать кухню и холодильник в чистоте. Кроме того, необходимо отделять сырые продукты, которые нуждаются в термической обработке, от готовых к употреблению. В таком случае даже длительное хранение в морозилке не приведет к каким-либо негативным последствиям, если, конечно, морозилка обеспечивает необходимую температуру.
Можно ли повторно замораживать продукты?
Однозначного ответа на этот вопрос нет. Дело в том, что в морозилке замораживаются не продукты, а вода которая в них находятся. Отсюда следует, что продукты, которые содержать минимальное количество воды, можно много раз замораживать и размораживать. Например, это касается сала, сливочного масла, сыра и т.д. Также никаких проблем не возникает в результате многократной заморозки сыровяленых продуктов.

Как правильно замораживать и размораживать продукты
По возможности необходимо избежать повторной разморозки продуктов.
