Как получается сочное мясо
При высоких температурах в мясе начинается процесс гелеобразования белков. Простыми словами, содержащиеся в мясе белки образуют гель, которая способна удерживать воду и другие вещества.
Мясные белки принято делить на три основные группы: миофибриллы, саркоплазматические белки, а также составляющие соединительных тканей (например, коллаген). При нагревании, все они разрушаются и мясо становится тверже, но при этом сохраняет внутри себя влагу — то есть, становится сочным.

Мясо делает вкусным реакция Майяра. Она происходит, когда содержащиеся в нем аминокислоты взаимодействуют с сахарами (естественными или содержащимися в маринаде) при температуре выше 141 градуса Цельсия. Реакция Майяра приводит к появлению сотен новых вкусовых и ароматических соединений.

Степени прожарки мяса
Сырое мясо имеет красный цвет, а после готовки становится коричневым. За цвет мяса отвечает белок миоглобин, который при температурах выше 77 градусов Цельсия теряет свою структуру.
Примечательно, что цвет мяса может разниться в зависимости от степени прожарки. При температуре 52 градуса получается мясо прожарки рэир (rare), которое внутри холодное и красное. Мясо в степени прожарки медиум рэир (medium rare) более теплое внутри и имеет розоватый оттенок — его готовят при температуре 57 градусов, обжаривая по 1-3 минуты с разных сторон. Полностью прожаренное мясо называется вел-дан (well done), готовится при температуре выше 70 градусов и имеет серый цвет.
