Кто такие супердегустаторы/
Термин «супердегустатор» появился относительно недавно, в 1990 году. Его автором считается психолог Линда Бартошук, которая вместе со своими коллегами проводила эксперименты по изучению органов вкуса человека. В ходе опытов они выяснили, что некоторые люди практически не чувствуют вкуса вещества 6-н-пропилтиоурацил, а другие, наоборот, считают его невыносимо горьким.
Дальнейшее изучение показало, что у чувствительных к этому веществу людей на поверхности языка гораздо больше грибовидных сосочков, чем у остальных мужчин и женщин. Так называются крошечные образования, которые содержат в себе вкусовые рецепторы, передающие в мозг информацию о вкусе тех или иных продуктов.

Чаще всего супердегустаторами являются женщины, у мужчин высокая чувствительность к вкусам встречается реже. Возможно, женщины лучше ощущают вкусы из-за гормонов. Научно доказано, что во время менопаузы их чувствительность снижается — в этот период как раз падает уровень женских гормонов.

Тест на чувствительность языка
Если вы очень чувствительны к горькому вкусу и придирчивее к еде, чем все остальные, возможно, у вас много вкусовых рецепторов. Но существует один способ точно узнать, являетесь ли вы супердегустатором. Для этого понадобится синий пищевой краситель и лист бумаги с дыроколом.
Тест на чувствительность языка состоит из пяти шагов:
- Нанесите на язык синий пищевой краситель.
- Рассмотрите язык перед зеркалом при помощи лупы. Вы увидите маленькие круги диаметром в 1 миллиметр, которые кажутся более светлыми, чем остальная поверхность языка, — это и есть грибовидные сосочки.
- Возьмите небольшой лист бумаги и сделайте на нем отверстие при помощи дырокола, диаметр круга должен составить около 6 миллиметров.
- Поместите этот круг на кончик языка посередине или сбоку.
- Посчитайте, сколько грибовидных сосочков находится в круге.

Если в окружности есть только 15 светлых кружков, то вкусовых рецепторов на языке очень мало, и вы — недегустатор. Если их число до 35 штук, вы относитесь к дегустаторам. Если же грибовидных сосочков больше 35 штук, поздравляем, вы входите в 25% супердегустаторов. Стоит подчеркнуть, что чтобы разглядеть крошечные точки, может понадобиться увеличительное стекло.
