Что происходит в момент кипячения воды
Кипением называется обильное выделение пара, которое происходит когда температура воды достигает 100 градусов. Благодаря термическому воздействию погибают микроорганизмы. Правда, некоторые исследования говорят о том, что на самом деле далеко не все микроорганизмы погибают после первого и даже второго кипячения. Поэтому данный способ очистки нельзя считать надежным.
Но самое главное, что химический состав воды из-под крана, как известно, далек от H2O. В ней, как было сказано выше, содержится множество других химических элементов. Причем некоторые из них попадают в воду по мере транспортировки, например, это касается ржавчины и слизи, которыми покрыты водопроводные магистрали изнутри.

Почему нельзя кипятить воду многократно
Главный аргумент против кипячения воды заключается в том, что после многократных перекипячиваний количество токсичных соединений будет увеличиваться. Например, взаимодействие хлора в воде с преобразованными веществами, то есть возникшими в результате кипячения, может привести к образованию в воде диоксинов, сильных ядов.
Наверняка вы замечали, что после кипячения вкус воды меняется, причем, не в лучшую сторону. Причина заключается в том, что часть воды испаряется, то есть ее становится меньше, а содержание солей и других химических элементов остается тем же. Правда, большинство из них выпадает в осадок, в результате чего образуется накипь. Но, в любом случае, состав меняется. Атомарный водород скапливается в нижних слоях жидкости и на дне чайника, что увеличивает плотность воды. Из этих соображений воду желательно кипятить только раз.

Также считается, что длительное и многократное кипячение приводит к повышению концентрации дейтерия, или тяжелой воды. Данное вещество представляет собой тяжелые изотопы водорода и считается слаботоксичным. Атомарный водород скапливается на дне чайника. Правда, по мнению экспертов, опасения напрасны. Чтобы дейтерий мог причинить вред организму, воду нужно перекепятить ни одну сотню раз.
Кроме того, есть еще одна причина, из-за которой не стоит многократно перекипячивать воду, по крайней мере, в электрическом чайнике. Согласно исследованию автономной некоммерческой организации “Роскачество”, при повторном кипячении воды в каждом третьем чайнике возникает формальдегид спустя 12 часов.
Вред многократного кипячения зависит от качества воды?
Надо сказать, что среди экспертов есть как противники повторного кипячения воды, которые говорят, что это опасно для здоровья, так и те, которые утверждают, что многократное перекипячивание не может причинить вред здоровью. Кто из них прав? Следует учитывать, что химические реакции в воде и концентрация вредных веществ зависят от ее состава.
Чистую воду можно кипятить любое количество раз
