От приверженцев веганской диеты часто можно услышать, что травоядные животные питаются исключительно травой, и получают из нее все необходимое для организма, поэтому и человек может отказаться от мяса. Однако это утверждение является большим заблуждением, так как организм травоядных сильно отличается от организма человека. Недавнее исследование сотрудников Маастрихтского университета подтверждает факт того, что растительные белки не способны полноценно заменить мясо, несмотря даже на одинаковую калорийность продуктов.
К своей работе авторы исследования привлекли 16 добровольцев в возрасте от 65 до 85 лет. Участники эксперимента в разные дни потребляли разную пищу — в один день ели разнообразные продукты, включая нежирную говядину, а в другой день — исключительно веганскую еду. Растительная пища содержала такое же количество калорий и белка, так как включала в себя бобы, сою и другие богатые белками продукты.

Все участники после принятия пищи воздерживались от занятий спортом и тяжелых физических нагрузок. Кроме того, они не употребляли алкоголь в течение двух дней перед каждым экспериментальным днем. После потребления пищи исследователи сравнивали аминокислотные профили плазмы и отслеживали скорость синтеза мышечного белка. Для этого они брали у добровольцев кровь на анализ, а также делали биопсию мышц, то есть брали образцы мышечной ткани.
Почему от мяса нельзя отказываться
Как сообщается в журнале Journal of Nutrition, пища с нежирной говядиной привела к гораздо более высоким показателям синтеза мышечного белка, по сравнению с веганской едой. Синтез мышечного белка у пожилых людей после потребления мяса был более интенсивным на 47%, причем это наблюдалось в течение шести часов после еды.
