От какой зелени риск заразиться кишечными инфекциями
Как поясняют ученые, они регулярно наблюдают вспышки заражения кишечными инфекциями из-за салата, но в то же время люди редко заражаются после употребления в пищу капусты и других капустных овощей. Это мотивировало команду провести необычное исследование — они заразили листья пяти овощей кишечной палочкой O157:H7, и наблюдали что происходило с бактериями после хранения листьев при разной температуре: 4°C, 20°C и 37°C.
В результате авторы работы обнаружили, что выживаемость бактерий зависела от двух факторов — температуры окружающей среды и свойств поверхности листа, таких как шероховатость и наличие натурального воскового налета, который, как известно, имеется на капусте (из-за него вода не задерживается на поверхности листа, а собирается в капельки и скатывается).

Как сообщают исследователи в издании Food Microbiology, при комнатной и более высокой температуре кишечная палочка быстро размножается. Соответственно, высокий риск заражения кишечной инфекцией. Но если салат положить в холодильник, то при температуре 4 градуса происходит резкое снижение популяции бактерий. Таким образом, если салат полежит в холодильнике, риск получить заражение снижается.
Но, что самое интересное — с капустой ситуация противоположная. При высокой температуре кишечная палочка на ее поверхности развивается гораздо медленнее, чем на салате. Но если капусту положить в холодильник, бактерии могут дольше сохраниться, разумеется, если они присутствовали изначально.
Тем не менее, в целом риск заразиться кишечной инфекцией при употреблении сырой капусты в пищу значительно меньше, по сравнению с салатом. Кроме того, капусту, в отличие от салата, чаще всего подвергают термической обработке. В результате риск заражения снижается еще больше.
